My guess is the whiplash impact moved the firewall/underdash sound-absorbing materials a small bit but enough to allow an existing engine noise to become more discernable from inside the car than before the wreck.
Another guess - very slight horizontal displacement of the overhead cams allowing the valve contact point to be displaced from its original position.
