What happens if pilot assist is left unattended

I was wondering what happens when Pilot Assist is left unsupervised. I saw a video with a VW Arteon where if the driver doesn't intervene, as in have their hands on the wheel the car will audibly warn the driver. if the driver doesn't intervene after that it will brake aggressively and tug the seatbelt. Then it will automatically switch on the hazards and pull the car to shoulder if possible and then call emergency services.

Does Volvo do something similar if you don't intervene with Pilot Assist. I have left my hands off the wheel before when in Pilot Assist and it repeatedly beeped at me and then switched off the system. After that I put my hands back on the wheel. Does it do anything further after that?

You saw it all. When you stop paying attention, the car will be a car without driver.

The Volvo system just turns off Pilot Assist . . and the vehicle becomes a vehicle without human or computer control . . though I believe lane assist would still try to keep the vehicle in-lane, and emergency braking and crash avoidance will still work

I believe it also turns off the cruise control so that the car starts to slow down.

Or someone hits you from behind because you are going 6 mph on a 70 mph highway when you passed out. Sounds like the VW system might save your life.

Run off road mitigation would also kick in, but I've never let a car get that far to know what that's like.

Correct - pilot assist disengages (which also disengages ACC)

I'm surprised Volvo hasn't implemented some kind of safety system for when it detects the driver's hands aren't on the steering wheel anymore. I know it disables cruise control, which in theory would slow you down, but it doesn't do anything else to prevent an accident. I know Mercedes has something called "Active Emergency Stop Assist," which brakes the vehicle to a standstill in its lane if it detects that the driver is no longer actively driving the vehicle. It even unlocks the doors while calls emergency services. BMW also has something similar where if you pull up on the electronic parking brake while driving, it will start to slow down, pull over to the side of the road and call emergency services.

Volvo needs to implement a similar feature asap. Unless there's a specific reason they haven't, but I don't know what that would be.

L4 will implement those shoulder parking feature.
With L2 it is driver's responsibility to do so.
